Soft, floral, a little earthy, and not really a tea at all. Greek Mountain Tea is the flowering tops of Sideritis scardica, the herb that grows high above the olive groves of northern Greece.
Hand-harvested on the upper slopes of Mount Olympus and dried whole. Naturally caffeine-free. Greek mountain villages have brewed it for generations, long before anyone called it wellness.
Steep a few stems in just-boiled water for four or five minutes. Add a spoon of Greek honey and a slice of lemon. Good in the morning, better in the evening.
