Greek honey like this isn't gathered, it's followed. The beekeepers move their hives with the seasons, tracking the bloom across the mountains of Pangaion. Each of these honeys is a different slope, a different forage, a different month: wild thyme, wildflower, forest, pine, chestnut. Raw, unfiltered, never heated. Not a jar of sweetness. A record of a place.
