What is migratory beekeeping?
The hives move. Across the mountains of Pangaion, beekeepers follow the seasons and the blooms: wild thyme, pine, heather, chestnut, wildflower, moving the hives to where the forage is. The honey is not gathered from one static spot; it is followed across a landscape and a year.
Why does the forage matter?
Greece is one of the most botanically rich places on earth, with hundreds of native plant biotypes and thousands of plant species. Each forage gives the honey a different character: wild thyme is bright and herbal, forest is dark and malty, pine and heather are resinous. The bees do the sourcing; the place does the rest.
Why is my raw honey crystallising?
Because it is real. Crystallisation is the natural state of raw, unheated honey, a sign it has not been processed into a permanently clear syrup. Warm the jar gently in hot water and it returns to liquid.
