Wildflower honey usually means bees foraging from open meadow flowers — lighter, more floral, more predictable. Forest honey includes nectar from trees and shrubs as well as honeydew from insects feeding on trees, which produces a darker, more mineral, more complex result. The forest ecosystem contributes sources that meadow honey does not — pine, oak, chestnut, arbutus — and the result is a honey with more depth and less sweetness.

Why does this honey vary between batches?

Because the source does. A forest ecosystem produces different forage in different seasons and different years — drought, rainfall, temperature, and bloom timing all affect what the bees gather. This variability is the signature of real, place-based honey rather than a standardized commercial product. If every jar tasted identical, it would mean the honey had been blended and processed to achieve consistency. This one has not.

Is crystallization a quality problem?

No. Crystallization is the natural state of raw honey and a sign that it is real and unheated. Honey that stays perfectly clear forever has usually been heated and filtered into a syrup. If you prefer it liquid, warm the jar gently in hot water and it returns to a pourable state.

What is migratory beekeeping?

The beekeepers move their hives with the seasons, following specific blooms across the slopes of Mount Pangaion. Instead of one static apiary, the bees are taken to the forage as it flowers, so each honey captures a particular plant and a particular month.

How does this compare to Manuka honey?
