Above 1,000 metres, in unpolluted mountain air, the herbs and mountain tea grow wild and slowly: oregano, thyme, sage, rosemary, and Sideritis mountain tea. The elevation and the short season concentrate the oils. Hand-harvested at peak bloom, slow-dried, whole-leaf.
