Questions we hear often

Is crystallization a quality problem?
No. Crystallization is the natural state of raw honey and a sign that it is real and unheated. Honey that stays perfectly clear forever has usually been heated and filtered into a syrup. If you prefer it liquid, warm the jar gently in hot water and it returns to a pourable state.
What is migratory beekeeping?
The beekeepers move their hives with the seasons, following specific blooms across the slopes of Mount Pangaion. Instead of one static apiary, the bees are taken to the forage as it flowers, so each honey captures a particular plant and a particular month.
How does this compare to Manuka honey?
It is a different honey from a different place. Manuka comes from New Zealand; this is single-forage Greek honey from Mount Pangaion, raw and unfiltered. We describe our honey by its forage and its place rather than by a rating number, so you choose it for the flavor and the provenance.
What do raw and unfiltered mean here?
It means the honey is not heated or pasteurized and is not fine-filtered, so the natural pollen stays in the jar. It is honey as the bees made it. This is also why it can crystallize over time and why the color and flavor vary a little by forage and season.
What makes Mount Pangaion honey distinctive?
The forage. The slopes of Pangaion carry a wide range of wild plants, and the hives are moved to follow specific blooms, so each jar reflects one forage and one season. It is a record of a place, which is why we name the forage on every jar.
