Why does finishing olive oil matter?

When you cook with olive oil, heat changes its flavor profile — not negatively for most applications, but differently from its raw state. A good Manaki EVOO raw has a mellow, buttery, faintly peppery finish that disappears when used for high-heat cooking. Reserving a bottle specifically for finishing — for the moment before serving, not the moment before sautéing — means you taste what the oil actually is, not what heat made it into.

Is one bottle better quality than the other?

No. Both are the same oil from the same groves. The idea of a "finishing oil" as something categorically different from a "cooking oil" is largely a marketing construction. The real distinction is one of use: raw oil lets you taste its character directly; cooked oil integrates into the dish. The bundle provides enough volume to use olive oil well in both contexts without rationing.

Why Manaki specifically?

Manaki is a mild, buttery variety grown almost exclusively in the Argolis region of the Peloponnese. Unlike Koroneiki — the dominant Greek variety, high in polyphenols and more intensely peppery — Manaki integrates. It is olive oil that enhances without announcing itself. For everyday cooking and finishing alike, that quality translates to a more versatile bottle.
